Here is a delicious recipe from ChefLaura Orts, from the Northern Baja Gerson Center:

​Orange Vinaigrette

Ingredients:
2 oranges ( juice)
1-2 lemon ( juice) or apple cider vinegar or both
3 garlic
2 scallions
1 tablespoon of flax oil
1 tea spoon of honey

Preparation:
Put the orange juice and flax oil in a bowl or jar and chop the garlic and onion finely and add to the juice.

Potato Dumplings

Here is a delicious recipe from ChefIliana Cannet, from the Northern Baja Gerson Center:

Potato Dumplings

Ingredients:
Potatoes
Onion
Garlic
Mint
Marjoram
Grinded oatmeal

Preparation:
1. Steam potatoes for 1hr, chop mint, garlic, onion, mash potatoes and blend with vegetables and a pinch of marjoram.
2. Lay grinded oatmeal on baking sheet to dumplings from sticking.
3. Shape mashed potatoes into hand size balls and set on baking sheet, bake at 330` for 1hr, and broil the last 7 min.
Enjoy!
*amount of potatoes will be according to diners.

Spaghetti Squash Salad

Here is a delicious recipe from ChefLaura Orts, from the Northern Baja Gerson Center: Spaghetti Squash Salador "Squaghetti Salad"

Ingredients:


1 Spaghetti squash
3 Beets
2 Carrots
1 Red onion
1 Bunch cilantro
1 Mango
1 Small glass of orange vinaigrette
Preparation:
1. Cut the squash in half and remove the seeds, put to bake upside down for 1 hr at 250 F.
2. Wash and cooke the beets, when ready peel and cut in to squares.
3. Grate the carrot and finely chop the onion and cilantro.
4. Using a fork take the spaguetti and put it in a glass container then the beets, then carrots, then the onion and finaly the cilantro.

Add the dressing and enjoy!

​Zucchini Noodle Casserole

You'll need:
3 zucchinis
Bunch broccoli
1 green onion or shallot
1 yellow bell pepper
Fresh dill
Garlic

Sauce:
2 tomatoes
2 green onions
Small sweet orange pepper

Method
1. Sautée dill and garlic in a bit of water in a large pan.
2. Put zucchini spaghetti in pan.
3. Add onion, broccoli and pepper in a pan and simmer slowly.
4. Sauce: Cook sauce ingredients in small saucepan until water cooks off.
5. Add sauce to cooked vegetables and serve.

Recipe - Hippocrates Soup

Using a 4 or 6 quart pot, cut vegetables in small cubes, cover with distilled water one inch above the veggies and bring to a boil, then lower heat cover and simmer for 2 hours.

Ingredients:
1½ lbs. tomatoes

1 lb. potatoes
1 medium onion
1medium celery knob (or 3 or 4 celery stalks)
1 large leek
Garlic as desired
A little parsley (leaves only) or medium parsley root

Do not peel any of these vegetables - just scrub and wash them well before you cut them. When cooked, put the soup through the food mill in small portions, discard fibers and peels left behind. Let the soup cool down to room temperature before you store it in the refrigerator.

We like to keep some stock aside to use for other recipes.

consistency shown in the two bottles below)

Warm up and enjoy the special soup within 2-3 days.

Recipe - Oat Cookies

Ingredients:

  • Oats, gluten free
  • Bananas, ripe, peeled
  • Applesauce

Mash 2 bananas with a fork in a bowl. Add 3 cups of oats and 1 cup of applesauce to the banana mash. Stir well. Adjust to your liking.

Spoon out the dough on parchment paper. For variety, you can add dried fruit as a topper.Heat the oven to 375 degrees. Bake for 15 min.
Enjoy as a treat or for breakfast on the go!

Recipe - Mango Banana Pudding

Ingredients:

  • 1 banana, peeled
  • 1 mango, peeled and pitted

Add the banana and the mangoto your blender and blend until creamy. Add a little distilled water if necessary.
You should have a thick pudding consistency.

Recipe - Potato Puffs

Ingredients:

  • Potatoes

Brush and wash potatoes. Cut them into wedges. Heat oven to 350 degrees and bake until golden brown.
Enjoy with dips or by itself.

Recipe - Herb Yogurt

Ingredients:

  • non-fat and salt-free organicyogurt
  • dried garlic powder
  • dried onion powder
  • ​tumeric powder (if allowed)
  • fresh lemon juice
  • apple cider vinegar
  • flaxseed oil

After the initial detox phase, a little bit of yogurt is allowed on the therapy. Please check with your practitioner, if it's ok for you to have it.

Put the yogurt in a nut milk bag in a colander over a bowl. Strain it overnight or longer and discard the whey (the clear, slightly yellowish liquid)from the bowl.
The strained yogurt will look something like ricotta cheese or even thicker depending on how much whey is drained. Whisk it well.

​Addingredients to your liking and enjoy on your baked

potato or as bread spread.

*Note: Whenever you use flaxseed oil, make sure to let your food cool off a bit, since the oil will become rancid quickly.
