Really simple to whip up, these scrolls are ready in just under an hour!

Ingredients (makes 16 scrolls)

  • 2 3/4 cups Plain flour
  • 3 TBS Sugar
  • 1/2 tsp Salt
  • 2 1/4 tsp Dried instant yeast
  • 1/2 cup Water
  • 1/4 cup Milk
  • 2 TBS Unsalted butter
  • 1 large Egg
  • FILLING
  • 1/4 cup Unsalted butter at room temperature
  • 1/4 cup Brown sugar
  • 2 TBS Ground cinnamon
  • GLAZE
  • 1 cup Icing sugar
  • 1 tsp Vanilla extract
  • 2 TBS Milk

Method

  1. Preheat the oven to 200 degrees and turn off after 10 minutes or just before placing rolls in oven.
  2. In a large bowl, mix the flour, the sugar, salt, and yeast together until evenly dispersed. Set aside.
  3. In a small microwavable bowl, heat the water, milk, and butter together in the microwave until the butter is melted (about 30-45 seconds). Stir the butter mixture into the flour mixture. Add the egg and knead with hand or with stand mixer for 3-4 minutes or until the dough is no longer sticky. Place in a lightly greased bowl and let rest for about 5 minutes.
  4. After the dough has rested for 5 minutes, roll it out in a 15x9 inch rectangle. Spread the softened butter on top. Mix together the cinnamon and sugar and sprinkle it all over the dough.
  5. Roll up the dough tightly and cut into 16 even pieces. Place in a lightly greased square pan, with room in between each one to allow room to rise, and lightly cover with alfoil.
  6. TURN OFF the oven and place the cinnamon buns in the oven to rise for 20 minutes.
  7. Keep the buns in the oven but remove the foil and turn the oven back on to 190 degrees.
  8. Bake the cinnamon rolls for 15-20 minutes or until golden. Remove from oven
  9. To make glaze, mix the powdered sugar, vanilla and 2 Tablespoons milk together until smooth and lump free. Drizzle over warm rolls.

Notes

If you want a coffee glaze, swap the 2 TBS milk for 2 TBS Coffee (I make a strong white coffee and use that) Or make both and have half and half!

FAQs

What is the best flour for cinnamon rolls? ›

Bread flour is hands down the best option when making cinnamon rolls. Any good cinnamon rolls recipe is going to usually call for bread flour instead of other kinds of flour. This is because bread flour is high in protein, usually containing 11% to 13% more protein than other kinds of flour.

Can I freeze cinnamon rolls before baking? ›

And if you're looking for the best cinnamon roll recipe, it's right here. Let the dough rise once and then shape the dough into cinnamon rolls. Place the rolls on a parchment-lined baking sheet and immediately stick the rolls into the freezer. Freeze the rolls until they are completely frozen solid.

What happens if you add too much flour to cinnamon rolls? ›

You want to add only the amount of flour that it takes so your dough is not sticky. Adding too much flour will make your rolls very dry. Once you have added the appropriate amount of flour, turn your mixer to a low speed and let the machine do all the kneading for you.

Do cinnamon rolls need to be refrigerated after baking? ›

Do you need to refrigerate cinnamon rolls? Unfrosted cinnamon rolls do not need to be refrigerated and will keep best at room temperature. Iced cinnamon rolls, and especially rolls with cream cheese frosting, should be stored in the fridge.

How long can cinnamon rolls last in the fridge before baking? ›

They can stay in the refrigerator for up to 24 hours (the longer they are refrigerated, the more the filling might liquify and seep out of the rolls – that may happen to a minor extent anyway, so don't panic).

Should I use all-purpose flour or bread flour for cinnamon rolls? ›

Salt: Dough is bland without salt. Flour: Flour is the structure of the dough. You can use either all-purpose flour or bread flour. You'll notice the rolls are a little chewier if you use bread flour.

Is bread flour or regular flour better for cinnamon rolls? ›

I love using bread flour for cinnamon rolls to enhance that soft, fluffy, and chewy texture. If you don't have bread flour on hand, all-purpose flour is a simple substitute that will create cinnamon rolls that will rise well and are equally delicious!

Why are my cinnamon rolls not fluffy? ›

There are a lot of variables that go into the consistency of dough, even down to the weather and humidity. But the most common reason cinnamon rolls don't turn out fluffy is because the dough didn't have enough time to rise.

What is the secret ingredient in Cinnabon? ›

Cinnabon's Secret Ingredient

This special Indonesian cinnamon, called Makara, is trademarked by Cinnabon. And because of that trademark, you won't find this product in your local grocery store spice aisle.
