Savory crispy roasted sweet potato cubes!

Also healthy, easy and vegan, which is why we are roasting them, but all that goes without saying.

There’s different cooking times depending on the shape and size of course, I noted them all below.

It’s all about the seasonings!

The ultimate secret to roasting sweet potatoes is to get the seasonings just right. Lots of magical savory spices: smoked paprika notes, garlic and onion powders, oregano and just enough sea salt to balance everything into the perfect flavor symphony.

Should you peel sweet potatoes?

Ideally you won’t peel them but i did ( less work + there’s nutrients in the skins) unless the texture bothers you. Make sure to eat them hot, straight out of the oven, but i must say they also make great leftovers and a perfect addition to any Buddha bowl.

Should I boil the potatoes before roasting?

When it comes to sweet potatoes I suggest not boiling them. Unlike the waxy golden potatoes they have a tendency to get mushy so it really doesn’t help your ideal roasting goals.

What to eat with roasted sweet potato cubes?

chunky guacamole

hummus, harissa or a lemon herb sauce

cucumber tomato onion salad

onions & peppers

roasted broccoli

vegan Caesar salad

shiitake mushroom gravy

cilantro & lime salsa.

Can you cut sweet potatoes the night before roasting?

Yes, absolutely! Sweet potatoes do not turn brown like golden and russets when exposed to air, so cutting them in advance is perfectly fine!

How to make roasted sweet potato cubes:

  1. Rinse the potatoes and dry them well with a kitchen towel.
  2. Cut into cubes or round slices trying to keep them about the same size. I prefer 1 inch cubes or 1 inch rounds.
  3. Toss the cut potatoes with a light drizzle of olive oil (or tahini) and coat well in the spice mix.
  4. Roast at a high temperature up to 500 degrees Fahrenheit and toss or flip after 10 minutes. Continue cooking an additional 10 to 15 minutes until crispy golden brown edges form and the potatoes are soft in the center.

If you cut them into cubes then use a spatula and give everything a gentle toss after 10 minutes and continue cooking another 15 minutes or so until golden brown to your liking.

WFPB + Plantricious

  • To make these potatoes without oil and WFPB + Plantricious compliant, use a nice drizzle of tahini instead of the oil and make sure to coat them well all over.

Notes

  • To make these potatoes without oil and WFPB compliant, use a nice drizzle of tahini instead of the oil and make sure to coat them well all over.
  • When choosing sweet potatoes make sure to go for an orange or red skin variety that is firm all over. For best results make sure to use a large baking dish / sheet pan, the more room your potatoes have the better they roast with the perfect crispy edges.

FAQs

Why are my roasted sweet potatoes not crispy? ›

While they are a traditional choice for Thanksgiving, they are healthy and delicious and should be eaten all year long. Typically when you roast sweet potatoes, they end up mushy, not crispy. That's because the high sugar content and moisture in the potato creates a softer result.

Should you poke holes in sweet potatoes before baking? ›

Before baking, use a fork to prick each sweet potato several times. You don't need to jab the fork in deep. We're creating steam vents. Otherwise the pressure in the sweet potato could build up so high in the oven that it explodes—an unlikely possibility but one best avoided!

Why are my roasted sweet potatoes soggy? ›

The main reasons for soggy sweet potato wedges are: overcrowding the baking sheet, not tossing in enough oil, having too thick sized wedges, and not roasting at a high enough heat.

Why do you soak sweet potatoes before baking? ›

The theory is that soaking draws out starch from inside the potatoes, helping them crisp up. I've tested soaking sweet potato fries many times, and I've found that it doesn't make them much crispier, if at all.

Why does vinegar make potatoes crispy? ›

When a small amount of vinegar is added to the soaking water before frying, it can help impart a tangy flavor to the fries without making them taste overly vinegary. The acid in the vinegar can also help to slightly break down the surface of the potatoes, aiding in the development of a crispier texture during frying.

How long do cubed potatoes take to soften? ›

Bring the water to a boil. Reduce the heat to medium-low. Cover the pot with a lid and let simmer until fork-tender, about 10 to 15 minutes for small and/or cubed potatoes or 20 to 25 minutes for large potatoes.

What is the best way to cube potatoes? ›

Lay your potato logs lengthwise in a single layer on the cutting board and slice crosswise at ½- or ¼-inch intervals, until you have a board covered in perfectly matching cubes.

How far in advance can I cube sweet potatoes? ›

Sweet potatoes: Peel and chop 3 to 4 days in advance. Store in a sealed bag or container with an airtight lid in the refrigerator. Winter squash: Peel, seed, and chop 3 to 4 days in advance. Store in a sealed bag or container with an airtight lid in the refrigerator.

Can you overcook a sweet potato in the oven? ›

Unfortunately, yes! If your sweet potatoes cook too long in the oven they can overbake and become dry. The insides will become mushy. Moving your sweet potato cubes around and checking them periodically can help avoid overcooking.

Is it better to wrap sweet potatoes in foil when baking? ›

Wrapping sweet potatoes in foil helps in a few ways. It prevents the exterior of the tuber from drying out and overheating too quickly, which would minimize enzymatic activity; it also results in a more evenly cooked texture.

What temperature is a baked sweet potato done at? ›

If you'd like a more precise indicator, insert an instant-read thermometer into the thickest part of the sweet potato. The internal temperature of a cooked sweet potato should read between 205- and 212-degrees Fahrenheit.

Why are roasted sweet potatoes so good? ›

But a plain, medium sized roasted sweet potato is a high-fiber, low-carb, low sodium, 100 calorie powerhouse of good stuff like potassium and protein and a wallop of vitamin A.

Is it better to boil or bake sweet potatoes? ›

The peel of a sweet potato has nearly ten times the antioxidant power as the flesh (an antioxidant capacity comparable to that of blueberries). However, the peel's nutrition really takes a hit when baked, which wipes out over two thirds of the antioxidants, whereas microwaving or boiling are comparatively much gentler.

Why don't my sweet potatoes go crispy? ›

If you don't evenly space your sweet potatoes so they aren't touching, they will not turn out as well. They need the air flow between them to maximize crisp, and any surfaces that are touching won't get the air they need. Halfway through the cook time, take a minute or two and flip them all with tongs.

Why do my roast potatoes not go crispy? ›

First things first, it's important to not overcrowd the tray, with Curtis saying: “you can't put too many potatoes in the tray because they will steam. You want them to be dry, and that's how you get them crispy on the outside, fluffy on the inside.”

Why are my oven roasted potatoes soggy? ›

Roasted potatoes can become soggy if the water content in the potato isn't fully cooked. Different potatoes have different water content percentages. Also, be mindful of the oil. Potatoes can react like sponges; too much oil can make your potatoes appear to be soggy.

Why are my baked sweet potatoes not getting soft? ›

Bake sweet potatoes at 400º F.

This temperature is hot enough that they won't take too long, but cooks them slow enough to really soften and sweeten the flesh. High heat, such as baking them at 425º, will result in potatoes that soften but do not get as creamy as my lower temperature method.

Why are my roasted potatoes not getting soft? ›

Tips For Roasted Potatoes

To make them soft and fluffy on the inside, but brown and crunchy on the outside there are three things you need to do. You need to pre-boil the potatoes. This is what gives that super-soft inside. Once you drain them, bash them around a bit.
